During the phage infection of the host, the phage attaches to the bacteria and inserts its genetic material into the cell. After that, phages usually follow one of two life cycles, lysis or lysogen. Lysogenic phages integrate their nucleic acid into the chromosome of the host cell and replicate with it as a unit without damaging the cell. The lysed phage takes over the machinery of the cell to make phage components. Then they destroy or lyse the cells, releasing new phage particles. Due to their host specificity, lytic phages are considered as an alternative solution against antibacterial pathogens. Foodborne illnesses caused by the consumption of agricultural products contaminated by enteric pathogens are still an important public health problem. Lytic phages can provide an effective and natural intervention to reduce bacterial pathogens on fresh and fresh-cut agricultural products. The use of multiple phage mixtures targeting a single pathogen is most commonly used in agricultural product evaluations to minimize the development of phage-insensitive mutants in the target pathogen population.
